Turkey Brine Recipe

In a large stockpot combine:
1/2 gallon water
1 cup sea salt
1 cup sugar
5 bay leaves
2 lemons, quartered
1/3 cup apple cider vinegar
1 gallon ice

Simmer about 15 minutes stirring to make sure sugar and salt are dissolved. Remove from heat and let set until you are ready to brine your bird.

Add ice to brine to cool it down. Put bird in a large container or brine bag and add brine. If brine does not cover birds after the ice has melted, add additional water to cover. If brining whole turkeys, brine for 24 hours. If brining cut up birds, brine for 6-8 hours.
