This lentil stew is packed with vegetables and spices, is super filling, and makes an enormous amount! It freezes very well if you don't want to eat it all at once.   1. Heat oil in a large stockpot. Add onions, celery, carrot, potato, and garlic, and saute for 5 minutes until everything begins to soften. Season with salt, pepper, and all other spices, and cook for 2 more minutes.
  2. Add lentils and saute 1-2 minutes. Add the broth, water, and tomato paste. Stir to combine until the tomato paste has dissolved. Bring the soup to a boil, then cover and reduce heat to low. Simmer for 30 minutes.
  3. Remove from heat and stir in almond milk and spinach. Stir until the spinach has wilted. Serve immediately with toppings such as sour cream and cilantro.
