Plum Lime Strawberry Popsicles
This popsicle recipe is unique, tart, and is slightly slushy-like in texture.
Plums
Plums are a unique fruit to add into your popsicles because they have such a nice sweet flesh but their skin is known for being so tart and sour. It's a great fruit to incorporate in smoothies and other desserts and is very underrated! Adding the lime juice will not only add additional tartness but will also keep the color once frozen. The texture is not as silky smooth as ones I've made with yogurt or banana and I purposely wanted to make one that was a slightly icier texture and more water based. If you don't have plums, you could use pineapple, peaches, nectarines, or any other fruit you desire. You could leave the plums out of the whole recipe and just have a strawberry lime popsicle which would be delicious!

- Juice one lime into your blender or food processor. Remove stone from two plums and the piths from strawberries. Add fruits to processor and blend until smooth. TIP: Leave skin from plum on because it adds such a nice tart flavor.
- Fill the molds with fruit mixture.
- Once your popsicle mold is filled completely, place your popsicle sticks into mixture, cover and freeze for 12-24 hours. If you are using ice cube trays, place saran wrap over the entire tray and then stick toothpicks through saran wrap into mixture and place in freezer for 8-12 hours. TIP: The saran wrap is great for the ice cube tray popsicles because it keeps the toothpick in place so it doesn't topple over during freezing. Once you're ready to eat the popsicle, just remove the saran wrap covering the individual popsicle keeping the others covered for later.
- Pop out of mold or tray and enjoy!
