Roasted Pumpkin Seeds

Pumpkin seeds are so nutritious, don't waste them! While you're roasting your pumpkin, you might as well roast the seeds too!

Ingredients
Pie pumpkin
1
Olive oil
1 tablespoon
Salt
Pinch
Spice blend of choice (optional)
  1. Using a large chef's knife, slice the top and stem off the pie pumpkin. Slice the pumpkin lengthwise down the middle.
  2. Scoop the seeds and innermost flesh.
  3. Preheat oven to 375F.
  4. In a large bowl filled with water, separate the seeds from the flesh. You'll notice the flesh starts to sink to the bottom, and the seeds float. Strain the water once all the flesh is removed.
  5. Place seeds on the baking sheet. Add a pinch of salt, your spice blend, and a tablespoon of oil. Stir seeds in oil, salt, & spices, then bake in the oven for ~30 minutes or until the seeds are golden and toasted. Taste-test the seeds until you're happy with the flavor. When in doubt, bake for longer.
