Melon Mint Salad

It's officially summer which means we have cantaloupe, watermelon, and honeydew out on the floor! This salad features sweet cantaloupe paired with cucumber & tomato, tossed in a simple dressing and balanced out by savory feta cheese. It is a perfect appetizer for a barbeque or a lovely dinner on the patio.

Ingredients
Cantaloupe

Cucumber
1
Cherry tomatoes
1 pint
Fresh mint
1/4 cup
Feta, crumbled
1/2 cup
Lemon juice
2 tablespoons
Maple syrup
2 tablespoons
Olive oil
1 tablespoon
Salt and pepper
To taste

Cook time: 5 minutes

  1. Begin by prepping all the fruits and vegetables:
    1. Cut off the cantaloupe rind and cut it into cubes.
    2. Slice the ends off the cucumber, then cut in half lengthwise. Scoop out the seeds, make a cut lengthwise down the middle, then slice into half moons.
    3.  Cut the cherry tomatoes in half.
    4. Roughly chop the mint. 
  2. Add cantaloupe, cucumber, and tomatoes to a large bowl.
  3. In a small bowl or jar, whisk together the lemon juice, maple syrup, olive oil, salt and pepper. 
  4. Drizzle the dressing over the cantaloupe mixture.
  5. Top salad with fresh mint and crumbled feta cheese.
