Pepinos originated in the Andean highlands of Chile and Peru, and are now grown throughout South and Central America, Australia, New Zealand, and the southwest US. They have a flavor reminiscent of a cucumber or honeydew, and are ripe and ready to eat when they turn a cream color with purple stripes. This spritzer is a light and refreshing cocktail highlighting the unique flavors of the pepino.
