Pepino Spritzer
Pepinos originated in the Andean highlands of Chile and Peru, and are now grown throughout South and Central America, Australia, New Zealand, and the southwest US. They have a flavor reminiscent of a cucumber or honeydew and are ripe and ready to eat when they turn a cream color with purple stripes. This spritzer is a light and refreshing cocktail highlighting the unique flavors of the pepino.

Ingredients
Pepino melon

Herb Pharm Tulsi Basil liquid extract
1 dropper
Simple syrup
2 ounces
Sauvignon Blanc
16 ounces
Soda water
To top
Rosemary sprigs
To garnish
- Peel the pepinos and chop them into medium size pieces. Place in a large bowl and muddle or mash as much as you can.
- Strain the pepinos through a strainer, reserving all the liquid.
- In a cocktail shaker, add the pepino juice, 1 dropper of Basil liquid extract, 2 ounces of simple syrup, and 16 ounces of wine. Stir to combine.
- Divide the drink among 4 wine glasses. Add ice, top with soda water, and garnish with a rosemary sprig.
