Greek Pasta Salad

This is a super quick and easy pasta salad full of veggies and satisfying flavors. You can make your own balsamic vinaigrette, or use a pre-made one from the Co-op, like Annie's!

Ingredients
Fusilli pasta
16 ounces
Cucumber, quartered
1
Cherry tomatoes, halved
1 pint
Sliced olives
4 ounces
Feta
4 ounces
Red onion, diced
1/2
Balsamic vinaigrette
1/2 cup
Salt and pepper
To taste

Prep time: 10 minutes

Cook time: 15 minutes

  1. Bring a large pot of salted water to a boil. Cook fusilli according to package directions. Drain and rinse with cold water.
  2. Quarter the cucumber, half the cherry tomatoes, and slice the onions. 
  3. In a large bowl, combine the pasta, cucumber, tomatoes, onions, olives, feta, balsamic vinaigrette, salt, and pepper until thoroughly combined.
  4. Serve cold and enjoy!
