Gnocchi with White Beans & Kale in Garlic Cream Sauce

This gnocchi recipe is absolutely delicious and packs tons of nutrition with the addition of kale and white beans. You could use cannellini or great northern beans as well. A rich and comforting garlic cream sauce brings it all together for a satisfying meal.

Ingredients
Unsalted butter
4 tablespoons
Garlic cloves, minced

All-purpose flour
2 tablespoons
Whole milk
1 cup
Vegetable broth
1 cup
Parmesan cheese
1/2 cup
Garlic powder
1 teaspoon
Salt & pepper
To taste
Gnocchi
1 pound
White beans, drained and rinsed
1 can
Kale, chopped
3 cups
Parmesan cheese
1/3 cup

  1. Prepare gnocchi according to package directions, or try out our homemade gnocchi recipe!
  2. Heat butter in a large saucepan over medium heat. 
  3. Add minced garlic and fry for a few seconds. Add flour and whisk for one minute on low heat.
  4. Add milk gradually and keep whisking continuously to make a lump-free mixture. 
  5. Add vegetable broth and cook until the sauce thickens.
  6. Add parmesan cheese, garlic powder, salt and pepper, and cook until the cheese melts.
  7. Meanwhile, lightly saute the kale in a large saucepan until it begins to wilt.
  8. To the garlic cream sauce, add the cooked gnocchi, white beans, and additional Parmesan cheese and mix everything together until combined and heated throughout. Serve & enjoy!
