Kohlrabi Slaw

Switch up your coleslaw and try kohlrabi instead of cabbage! Kohlrabi is another cultivar of the same species as cabbage. Paired with apples, broccoli & carrots, this summer slaw is sure to impress.

Ingredients
Granny smith apples, peeled & shredded

Kohlrabi, peeled & shredded

Broccoli crown, cut into small florets

Carrots, peeled & shredded

Mayo
1/3 cup
Greek yogurt
1/3 cup
Apple cider vinegar
3 tablespoons
Honey
1 tablespoon
Salt
1 teaspoon
Pepper
1 teaspoon

  1. Wash and prep apples, kohlrabi, broccoli & carrots. Put together in a large mixing bowl.
  2. Whisk mayo yogurt, vinegar, honey, salt and pepper together.
  3. Add dressing to the veggies and toss thoroughly to combine.
