Pear Feta Salad with Candied Walnuts

We've got so many beautiful pears in the store right now, so we decided to feature them in a salad! Tart pears, tangy feta cheese, and sweet candied walnuts balance each other out for a great main salad or side dish. We recommend making extra candied walnuts and reserving them for a tasty snack or dessert. 

Ingredients
Candied Walnuts
Butter
1 tablespoon
Sugar
1/4 cup
Water
1 tablespoon
Walnuts
1 cup
Dressing
Juice of lemon

Garlic cloves, minced

Dijon mustard
1/2 teaspoon
Olive oil
1/2 cup
Salt
1/4 teaspoon
Salad
Mixed salad greens
5 ounces
Fresh pears, sliced
2
Candied walnuts
1 cup
Dried cranberries
1/3 cup
Feta cheese, crumbled
1/3 cup
  1. Heat butter in a medium skillet over medium-high heat. Once it melts, add the sugar, water, and walnuts. Stir continuously for 5 minutes - if the walnuts begin to burn turn off immediately. Transfer to a plate and let cool for 15 minutes.
  2. In a medium bowl, whisk together lemon juice, garlic, dijon mustard, olive oil, and salt.
  3. In a large bowl, add the salad mix, pears, walnuts, cranberries, and dressing. Mix thoroughly then top with feta crumbles.
  4. Divide among plates and enjoy!
