Cranberry Sauce


2 cups fresh cranberries (1/2 pound)
Zest and juice of one grapefruit
1/2” piece fresh ginger, peeled and finely chopped
1/2 cup sugar


Place all ingredients in a small saucepan over
medium heat. Simmer until cranberries burst 
and sauce begins to thicken.

Green Bean Casserole


1 lb fresh green beans- trimmed and cut into 
1 inch pieces
1x12 oz container of crimini mushrooms- small
diced medium onion, medium dice
2 clove garlic, minced
Olive Oil
2 Tablespoons all purpose flour
4 oz of grated cheese (Parmesan works well but
anything goes)
2 cups whole milk
3/4 cups panko bread crumbs
2 teaspoons salt
1 teaspoon Black Pepper

Sausage Stuffing


1 stick butter
1 vegetable bouillon cube
3 cups boiling water
2 Tablespoons canola oil
1 pkg Gimme Lean sausage or other bulk sausage
1 medium yellow onion, chopped
1 1/2 cup celery with leaves, sliced thinly
16 oz bag stuffing crumbs or cubes


Pre-heat the oven to 350°

Sweet Potato Biscuits


5 cups all-purpose flour
1 cup packed light brown sugar
2 Tablespoons baking powder 
1 1/2 teaspoon ground cinnamon
1 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1 cup vegetable shortening
2 large cooked, mashed, and cooled 
sweet potatoes
1 cup heavy cream

Vegan Gravy


1/2 cup vegetable oil
3-6 cloves of garlic, minced
1/4 yellow onion, minced
1/2 cup all purpose flour
2 Tablespoons nutritional yeast
1/4 cup Tamari sauce
2 1/2 cups vegetable broth
1/2 Tablespoon ground sage
Salt and freshly ground black pepper to taste
1/8 cup red wine
2 Tablespoons balsamic vinegar
6 mushrooms, sliced (optional)
