Roasted Artichokes with Garlic Butter
Roasting artichokes can seem like an intimidating task, but actually it's so easy! Simply cut and prepare the artichokes, drizzle them with a delicious fresh herb butter, and roast in the oven for half an hour. The result is a tasty appetizer or side dish that is sure to impress.

Garlic cloves, minced

Parsley, chopped

Thyme, chopped

Lemon juice

- Preheat the oven to 425 degrees F.
- Rinse the artichokes. Cut off 1 inch from the stem.
- Cut off the top 1/2-1 inch of each artichoke.
- Squeeze a little bit of lemon juice over the artichokes.
- Cut them in half vertically. Remove the choke (fuzzy part in the center) using a small spoon. Squeeze a bit more lemon juice over the artichoke halves.
- In a small bowl, combine butter, garlic, parsley, thyme, and lemon juice. Mix well to combine.
- On a large baking sheet, lay out 6 squares of foil. Lay each artichoke half on top of a piece of foil. Drizzle each artichoke with the herb butter. Sprinkle with salt and pepper. Fold the foil over the artichoke.
- Roast for 30-35 minutes until browned and crispy.
