Mason Jar Salads with Cilantro Mayo Dressing

- To begin, first rinse the qunioa and put it into a pot with 2 cups of water. Bring to a boil and then cover and let simmer roughly 20 minutes.
- Next, start the turkey. Add your choice of oil to a skillet and cook the turkey on medium heat until brown.
- While the qunioa and turkey cook, start prepping the vegetables. First, roughly chop the mixed greens and cilantro, slice the cherry tomatoes, and shred the carrots.
- Once the produce is prepared, start on the dressing by adding mayonaise, cilantro, olive oil, the juice of one lemon, maple syrup (or honey), salt, pepper, and coriander to a blender. Blend the mixture until smooth, adjusting seasoning as needed.
- After the turkey and qunioa have cooked and cooled, begin building your Mason Jars by adding the dressing first and then layering with qunioa, carrots, turkey, cherry tomatoes, onions, and lettuce to finsih.
- Enjoy right away or store in the fridge for a weekly meal prep!
