Tofu Bahn Mi Sandwich

This vegetarian Bahn Mi sandwich is packed with flavorful marinated tofu, quick-pickled vegetables, and a creamy Bahn Mi sauce that'll have you hooked. Vegan mayo can be easily substituted in to make this classic Vietnamese sandwich completely vegan.

Mayonnaise

  1. Combine shredded daikon, shredded carrot, jalapeno, rice vinegar, water, cane sugar, and salt in a jar or small bowl. Cover and refrigerate till the sandwhich is ready to assemble.

  2. Stir together tamari, maple syrup, lime juice, minced garlic, grated ginger, and black pepper in a large shallow dish. Slice tofu into rectangles about 1 centimeter thick. Submerge tofu slices in the marinade and let sit for at least 1 hour.

  3. Once tofu is marinated, heat oil in a skillet over medium heat. Cook tofu 3 minutes on each side until golden brown.

  4. Cut the baguette in half lengthwise. Spread the Bahn Mi sauce on both sides of the bread. Add tofu, pickled vegetables, and fresh cilantro. Serve and enjoy!
