Stuffed Peppers

Ingredients
Peppers

Turkey
1/2 lb
Quinoa
1 cup
Onion, diced

Garlic, minced
4 cloves
Beans, rinsed
1 can
Cilantro, chopped
small handful
Tomato paste
3 tablespoons
Cheese
1/2 cup

Prep time: 20 minutes

Cook time: 40 minutes

Servings: 1 pepper

  1. Preheat the oven to 425 degrees. 
  2. Wash the peppers, slice off the tops, and remove the seeds. 
  3. Once the prep is completed, cover the peppers in olive oil with salt and pepper to taste. 
  4. Once the oven is preheated, put the peppers in the oven and cook for 20 minutes.
  5. While the peppers cook, begin cooking the quinoa. First, rinse the quinoa, fill a pot with two cups of water, add the rice, bring to boil, reduce to simmer, cover and let cook roughly 20 minutes. Allow an additional 5-10 minutes for the quinoa to rest.
  6. While the peppers and quinoa cook, start the turkey. Add to a skillet, season to taste, and cook over medium heat until brown. 
  7. As everything cooks, rinse and drain the beans and begin chopping the onion, garlic, and cilantro. Once chopped and rinsed, add to the same skillet as the turkey. 
  8. Once the peppers are finished, remove them from the oven, and fill with the mixture of turkey, quinoa, beans, onions, and garlic.
  9. Top with cilantro, tomato paste, and cheese. Place back into the oven for an additional 15 minutes. 
  10. Remove from oven, se, and enjoy!
