Roasted Chicken & Asparagus with Lemon Orzo

Ingredients
Chicken thighs
1 pound
Asparagus
1 bunch
Orzo
1 cup
Avocado oil
1 tablespoon
Unsalted butter
1 tablespoon
Salt
to taste
Pepper
to taste
Garlic
2 cloves
Lemon, sliced, juiced & zested
1 + 1/2 lemon
Chicken broth
2 cups
Goat cheese
1 tablespoon
  1. Preheat the oven to 425. 

  2. In a bowl, toss the chicken with avocado oil, salt, pepper, garlic, and lemon slices. Roast for 20 minutes. Adding lemon slices on top of the chicken is optional. 

  3. In the same bowl, toss the asparagus with avocado oil, salt, pepper, garlic, and lemon.

  4. Remove the chicken after 20 minutes and on the same tray, add the asparagus. Roast for another 10-12 minutes or until the asparagus is tender. 

  5. While the chicken and asparagus cook, begin cooking the orzo by first melting butter in a pan and toasting the orzo for roughly 3-4 minutes. 

  6. Add broth to the same pan, bring to a low boil, and then reduce to a simmer. Cook the orzo covered for 10-15 minutes. 

  7. Once the orzo is cooked and the water has absorbed, mix in lemon juice and goat cheese.

  8. Combine, serve & enjoy!
