Roasted Chicken & Asparagus with Lemon Orzo
Bright, fresh, and full of flavor, our Roasted Chicken & Asparagus with Lemon Orzo is a dish that's indulgent in the best way. Tender chicken and crispy asparagus, roasted with garlic and lemon slices. Served over a bed of perfectly cooked orzo tossed with creamy goat cheese and the juice of one lemon. Every bite is a perfect balance of rich, tangy, and refreshing flavors. It’s elegant enough to impress at dinner, yet easy enough to enjoy any night of the week.

Preheat the oven to 425.

In a bowl, toss the chicken with avocado oil, salt, pepper, garlic, and lemon slices. Roast for 20 minutes. Adding lemon slices on top of the chicken is optional.

In the same bowl, toss the asparagus with avocado oil, salt, pepper, garlic, and lemon.

Remove the chicken after 20 minutes and on the same tray, add the asparagus. Roast for another 10-12 minutes or until the asparagus is tender.

While the chicken and asparagus cook, begin cooking the orzo by first melting butter in a pan and toasting the orzo for roughly 3-4 minutes.

Add broth to the same pan, bring to a low boil, and then reduce to a simmer. Cook the orzo covered for 10-15 minutes.

Once the orzo is cooked and the water has absorbed, mix in lemon juice and goat cheese.
