Marry Me Chicken Pasta

Ingredients
Boneless, skinless chicken thighs
1 pound
Extra-virgin olive oil
4 tablespoons
Salt
to taste
Pepper
to taste
Garlic
2 large cloves
Thyme
1 tablespoon
Crushed red pepper flakes
1 teaspoon
Sun-dried tomatoes
1/2 cup
Chicken broth
3/4 cup
Heavy cream
1/2 cup
Parmesan, grated
1/4 cup
Basil
to garnish
Pasta
2/3 of bag
  1. In a large pot, boil water for the pasta. Once it's boiling, add the pasta and cook until soft. Set aside.

  2. In a large skillet, heat oil over medium heat. Add chicken and generously season with salt and pepper. Cook on each side roughly 5 minutes or until golden brown. Set aside once finished. 

  3. In the same skillet, heat the remaining oil and stir in garlic, thyme, and red pepper flakes. Stir for roughly 1 minute or until the seasonings become fragrant. 

  4. Stir in the broth, tomatoes, heavy cream, parmesan, and salt, bringing it to a simmer.

  5. Add the chicken and pasta back into the skillet, combing the mixture so the pasta and chicken are coated with sauce. 

  6. Transfer to plate, sprinkle chopped basil and extra parmesan on top. Serve & enjoy!
