Lemon Shortbread Cookies

This lemon shortbread cookie is buttery, tender, and melts in your mouth. A hint of bright, fresh lemon adds just the right touch of zest, making it a simple yet satisfying treat for any time of day!

Ingredients
Cookies
Unsalted butter, softened
1 cup
Powdered sugar
1/2 cup
Lemon zest
1 tablespoon
Vanilla extract
1 teaspoon
All-purpose flour
2 cups
Salt
1/4 teaspoon
Glaze
Powdered sugar
1 cup
Lemon juice
1-2 tablespoons
  1. Preheat oven to 325 and line a baking sheet with parchment paper. 

  2. Cream together the butter and sugar until smooth. 

  3. Mix in the lemon zest and vanilla.

  4. Slowly stir in flour until dough forms. 

  5. Roll into cookie shapes, preferable 1/4 inch thick. 

  6. Chill in the refrigerater for 15-20 minutes so the cookies will hold their shape when baking. 

  7. Bake for 12-15 minutes or until the bottoms are lightly golden. 

  8. Let the cookies cool. Begin the glaze by whisking together the lemon juice and powdered sugar. 

  9. Once the glaze is made, drizzle over cooled cookies. 

  10. Sprinkle with powdered sugar.
