Strawberry Rhubarb Bars

These rhubarb bars are both sweet and tart, making them a delicious treat for any occasion! This recipe features 5 Co-op basics items and seasonal rhubarb from Sola Gratia Farm (link match eligible). The following items are part of Co-op Basics: 

  • Field Day organic flour
  • Field Day organic cane sugar
  • Prairie Farms butter
  • Moore Family Farm eggs
  • Field Day mediterranean sea salt
Ingredients
Crust

1/2 cup (1 stick)

  1. Preheat oven to 350 degrees Fahrenheit and line an 8x8 pan with parchment paper.

  2. Mix together 1 cup flour, 1/2 cup cane sugar, and 1/2 cup butter in a medium bowl.

  3. Press the mixture into the baking pan to form an even layer. Bake for 15 minutes.
  4. Mix together 2 eggs, 1 cup cane sugar, 1/4 cup flour, and 1/4 teaspoon salt. Then add in 2 1/2 cups of chopped rhubarb and mix to combine.
  5. Pour rhubarb mixture over the crust and bake for an additional 45 minutes.
  6. Set out to cool and then cut into squares.
