Rhubarb Bars
These rhubarb bars are both sweet and tart, making them a delicious treat for any occasion! This recipe features 5 Co-op basics items and seasonal rhubarb from Sola Gratia Farm (link match eligible). The following items are part of Co-op Basics:
- Field Day organic flour
- Field Day organic cane sugar
- Prairie Farms butter
- Moore Family Farm eggs
- Field Day mediterranean sea salt
Ingredients
Crust
All-purpose flour
1 cup
Cane sugar
1/2 cup
Butter
1/2 cup (1 stick)
Filling
Rhubarb
2 1/2 cups
Eggs

1 cup
Flour
1/4 cup
Salt
1/4 teaspoon

Preheat oven to 350 degrees Fahrenheit and line an 8x8 pan with parchment paper.

Mix together 1 cup flour, 1/2 cup cane sugar, and 1/2 cup butter in a medium bowl.
- Press the mixture into the baking pan to form an even layer. Bake for 15 minutes.
- Mix together 2 eggs, 1 cup cane sugar, 1/4 cup flour, and 1/4 teaspoon salt. Then add in 2 1/2 cups of chopped rhubarb and mix to combine.
- Pour rhubarb mixture over the crust and bake for an additional 45 minutes.
- Set out to cool and then cut into squares.
