Co+op Basics: Vegetarian Chili

This hearty vegetarian chili is the perfect meal for a crisp November day. Packed with bell peppers, onions, carrots, celery, and garlic, it’s bursting with rich flavor and nourishing ingredients. Made with a majority of our Co+op Basic staples, a blend of warm spices and just the right amount of heat, making every spoonful satisfying and cozy.

  • Field Day vegetable broth 
  • Field Day tomato paste 
  • Field Day cumin 
  • Field Day chili powder 
  • Field Day smoked paprika

Ingredients
Olive oil
2 tablespoons
Red onion, chopped

Bell pepper, chopped
1
Carrots, chopped
2
Celery, chopped

Salt
1 teaspoon
Garlic, chopped
5 cloves
Chili powder
2 tablespoons
Cumin
2 teaspoons
Smoked paprika
1 1/2 teaspoon
Dried oregano
1 teaspoon
Diced tomatoes, with juice
2 cans
Jalapeno, chopped

Tomato paste
2 tablespoons
Black beans, rinsed
2 cans
Pinto beans, rinsed
1 can
Vegetable broth
2 cups
Bay leaf

  1. Begin by warming the olive oil in a pot. 
  2. Once warmed, add onion, pepper, carrots, celery, and salt. Cook between 7 -10 minutes.
  3. Once vegetables have cooked down, add garlic, jalapeno, and tomato paste.
  4. Let additional vegetables cook down and then add chili powder, cumin, smoked paprika, and oregano. Let cook roughly 2 minutes. 
  5. Add tomatoes, beans, broth and bay leaves. Let simmer 30 minutes or until beans are cooked thoroughly.
  6. Extra step (optional): blend with an immersion blender to thicken consistency.
  7. Serve & enjoy!
