Co+op Basics: Stuffed Peppers

Ingredients
Assorted bell peppers

Field Day olive oil
2 tablespoons
Yellow onion, chopped
1/2
Garlic cloves, chopped

Jalapeno pepper, chopped

Field Day tomato paste
2 tablespoons
Field Day chili powder
2 teaspoons
Field Day cumin
2 teaspoons
Salt and pepper
To taste
Bulk brown rice
1 cup, cooked
Field Day black beans, drained and rinsed
1 cup
Field Day sweet corn, drained
1 cup
Lime juice
2 tablespoons
Mexican blend cheese
1 cup
Cilantro, chopped
1/2 cup
Field Day salsa
To serve
- Preheat oven to 450 degrees F.
- Cook brown rice according to your preferred method.
- Cut the tops off of the bell peppers and scoop out the seeds. Place them, cut side up, on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 10 minutes.
- Meanwhile, heat olive oil in a large skillet. Add onion, jalapeno, and garlic and cook for 5 minutes. Add the tomato paste and spices and cook for an additional 3 minutes.
- Remove from heat and stir in rice, black beans, corn, and lime juice. Season with additional salt and pepper if desired.
- Fill the peppers with the rice mixture and top with shredded cheese. Bake until the cheese is browned, about 20 minutes.
- Serve with cilantro and salsa.
