Co+op Basics: Stuffed Peppers

Ingredients
Assorted bell peppers

Field Day olive oil
2 tablespoons
Yellow onion, chopped
1/2
Garlic cloves, chopped

Jalapeno pepper, chopped

Field Day tomato paste
2 tablespoons
Field Day chili powder
2 teaspoons
Field Day cumin
2 teaspoons
Salt and pepper
To taste
Bulk brown rice
1 cup, cooked
Field Day black beans, drained and rinsed
1 cup
Field Day sweet corn, drained
1 cup
Lime juice
2 tablespoons
Mexican blend cheese
1 cup
Cilantro, chopped
1/2 cup
Field Day salsa
To serve
  1. Preheat oven to 450 degrees F.
  2. Cook brown rice according to your preferred method.
  3. Cut the tops off of the bell peppers and scoop out the seeds. Place them, cut side up, on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 10 minutes.
  4. Meanwhile, heat olive oil in a large skillet. Add onion, jalapeno, and garlic and cook for 5 minutes. Add the tomato paste and spices and cook for an additional 3 minutes.
  5. Remove from heat and stir in rice, black beans, corn, and lime juice. Season with additional salt and pepper if desired.
  6. Fill the peppers with the rice mixture and top with shredded cheese. Bake until the cheese is browned, about 20 minutes.
  7. Serve with cilantro and salsa.
