Yellow onion, chopped

Garlic, minced

- Cook the pasta according to package directions. Drain and set aside.
- In a medium saucepan over medium-high heat, heat 2 tablespoons olive oil. Add yellow onion and cook until they are slightly translucent, about 5-6 minutes. Add garlic and cook 1 minute more. Add crushed tomatoes, tomato paste, oregano, salt, pepper, and fresh basil. Stir to combine. Cook, stirring frequently, until sauce has thickened slightly, 15-20 minutes.
- In a blender or food processor, add chickpeas, breadcrumbs, eggs, parsley, salt, pepper, thyme, and oregano. Blend until mostly combined. Add in the olive oil and continue to blend until you have a cohesive mixture.
- Working in batches, take a small amount of the chickpea mixure and roll into a ball. You should have 12-16 balls depending on your preference.
- Heat 3/4 cup olive oil in a saucepan. Once it is hot, add the chickpea meatballs. Allow to cook for 6-7 minutes until brown and crispy. Flip the meatballs and cook on the other side.
- Add cooked spagetti to the marinara sauce and toss to combine. Divide the spaghetti among 4 plates and top with cooked chickpea meatballs, and a garnish of fresh basil. Top with freshly grated Parmesan cheese, if desired. Enjoy!
