Co+op Basics: Pumpkin Muffin in a Mug
As we welcome October, we lean into one of our favorite fall flavors, pumpkin! This pumpkin muffin in a mug is a quick & easy recipe, great for breakfast or dessert. Made with a majority of Co+op Basics, along with our bulk flour and local eggs. The following products are part of Co+op Basics:
- Field Day 100% pure pumpkin
- Field Day maple syrup
- Field Day cinnamon & nutmeg
- Field Day baking powder
- Field Day sea salt
- Field Day chocolate chips

Cook time: 60 seconds - 1 minute

In your microwave-safe mug, combine the wet ingredients - pure pumpkin, egg, maple syrup, and vanilla extract.

Mix ingredients until fully combined.

Once wet ingredients are combined, add dry ingredients into your mug - flour, baking powder, cinnamon & nutmeg, salt, and chocolate chips (optional).

Stir until all ingredients are combined but don't overmix!

Microwave for 60-90 seconds. Depending on microwave, you may need to add more time. Cook until the top of the muffin is fluffy.

Optional - add a drizzle of maple syrup.
