  1. Preheat oven to 375 degrees F.
  2. Press the tofu by wrapping it in a towel, then place something heavy on top. Let press for at least 20 minutes while you cook the soup.
  3. Heat 2 tablespoons olive oil in a large pot over medium heat. Add onions and saute 7-10 minutes, stirring frequently. Add the garlic and fresh ginger and cook 3-4 minutes more.
  4. Add the curry paste, pumpkin, vegetable broth, coconut milk, lime juice, peanut butter, salt, and cayenne. Stir well.
  5. Cover and let simmer 30-45 minutes, stirring occasionally. When the soup is ready, use an immersion blender to pure everything into a thin soup.
  6. Meanwhile, slice the tofu into bite size cupes. Transfer to a bowl, then add flour, salt and pepper. Toss to coat.
  7. Heat the remaining oil in a large saute pan over medium-high heat. Add tofu and let cook on each side for about 3 minutes until golden and crispy.
  8. Divide the soup among bowls and top with crispy tofu croutons. Enjoy!
