Co+op Basics: Pumpkin Bars
The temperature may still be high, but we are already thinking about fall desserts! We've put together a super easy pumpkin bar recipe featuring 8 staple products from our Co+op Basics Line. The following ingredients are all part of Co+op Basics!

Cream cheese, room temperature

- Preheat oven to 350 degrees F.
- In a large bowl, beat the eggs, sugar, oil, and pumpkin until well blended.
- In another bowl, combine the flour, cinnamon, baking powder, baking soda, and salt. Gradually add to pumpkin mixture and mix well.
- Pour batter into an ungreased 15x10 baking pan, or two 8x8 pans. Bake for 25-30 minutes or until set. Allow to cool completely.
- For the icing, beat the cream cheese, powdered sugar, butter, and vanilla in a small bowl. Add enough milk to achieve spreading consistency.
- Spread over the pumpkin bars and top with a sprinkling of sugar. Store in the refrigerator.
