Co+op Basics: Pumpkin Bars

The temperature may still be high, but we are already thinking about fall desserts! We've put together a super easy pumpkin bar recipe featuring 8 staple products from our Co+op Basics Line. The following ingredients are all part of Co+op Basics!

Field Day canned pumpkin
1 15-ounce can
Field Day all-purpose flour

Cinnamon
2 teaspoons
Baking soda
1 teaspoon
Baking powder
1 teaspoon
Salt
1 teaspoon
Icing
Cream cheese, room temperature
6 ounces
Field Day powdered sugar
2 cups
Tillamook butter, room temperature
1/4 cup
Vanilla extract
1 teaspoon
Kilgus whole milk
2 tablespoons

Prep time: 10 minutes

Cook time: 30 minutes

Servings: 18 small bars

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, beat the eggs, sugar, oil, and pumpkin until well blended.
  3. In another bowl, combine the flour, cinnamon, baking powder, baking soda, and salt. Gradually add to pumpkin mixture and mix well.
  4. Pour batter into an ungreased 15x10 baking pan, or two 8x8 pans. Bake for 25-30 minutes or until set. Allow to cool completely.
  5. For the icing, beat the cream cheese, powdered sugar, butter, and vanilla in a small bowl. Add enough milk to achieve spreading consistency.
  6. Spread over the pumpkin bars and top with a sprinkling of sugar. Store in the refrigerator.
