Co+op Basics: Peanut Butter Pancakes

You could substitute any nut butter in this recipe, but we're sticking with Field Day peanut butter since it is a part of our Co+op Basics line. Moore Family Farm eggs

4 tablespoons
Field Day smooth peanut butter
1/3 cup
Field Day cane sugar
1/4 cup
Field Day baking powder
2 teaspoons
Vanilla extract
1 teaspoon
Salt
1/8 teaspoon
Kilgus whole milk
3/4 cup
Field Day all-purpose flour
3/4 cup
Field Day coconut oil
For cooking

- Melt butter in a large pan or in the microwave. Add it to a large mixing bowl.
- To the bowl, add peanut butter, sugar, baking powder, vanilla, eggs, and salt. Whisk until combined.
- Add milk and whisk. Add flour and whisk.
- Heat a large skillet over medium-high heat. Add 1 tablespoon of coconut oil and let it heat up. Use a ladle or a 1/3 cup measurer to add pancake batter to the pan.
- Cook until the batter starts to bubble up, 2-3 minutes. Flip the pancake and continue to heat until fully cooked, another 2 minutes or so.
- Continue with the remaining batter, adding more coconut oil as needed.
- Serve with maple syrup & enjoy!
