Co+op Basics: Mixed Berry Coffee Cake

Coffee cake is a classic sweet bread typically served for breakfast or an afternoon snack alongside freshly brewed coffee.   1. Preheat oven to 350 degrees Fahrenheit. Spray a square baking pan or a 10-inch bundt pan with cooking spray.
  2. Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
  3. In a large bowl, beat the butter until light and creamy. Add the sugar and beat until fluffy. Add the eggs, one at a time, mixing well after each addition. Mix in sour cream and vanilla extract and blend until smooth.
  4. Add flour and mix until just blended.
  5. Transfer 1/2 cup of the batter into a small bowl. Stir in the fruit spread, mixing well. Set aside.
  6. Pour half of the batter into the baking dish and smooth the top. Add the fruit spread mixture and smooth. Add the remaining batter and spread evenly.
  7. Bake for 60-70 minutes until golden brown and a toothpick comes out clean.
  8. Cool for 15 minutes, then serve. Enjoy!
