Co+op Basics: Mixed Berry Coffee Cake
Coffee cake is a classic sweet bread typically served for breakfast or an afternoon snack alongside freshly brewed coffee. This coffee cake features an extra addition of a mixed berry fruit spread to give it a unique and delicious flavor! We also carry Field Day fruit spreads in strawberry, blueberry, and raspberry. - Preheat oven to 350 degrees Fahrenheit. Spray a square baking pan or a 10-inch bundt pan with cooking spray.
- Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
- In a large bowl, beat the butter until light and creamy. Add the sugar and beat until fluffy. Add the eggs, one at a time, mixing well after each addition. Mix in sour cream and vanilla extract and blend until smooth.
- Add flour and mix until just blended.
- Transfer 1/2 cup of the batter into a small bowl. Stir in the fruit spread, mixing well. Set aside.
- Pour half of the batter into the baking dish and smooth the top. Add the fruit spread mixture and smooth. Add the remaining batter and spread evenly.
- Bake for 60-70 minutes until golden brown and a toothpick comes out clean.
- Cool for 15 minutes, then serve. Enjoy!
