Co+op Basics: Millet Tofu Bowl with Spiced Chickpeas

Ingredients
Bulk millet
1 cup
Bulk walnuts, chopped
1/4 cup
Field Day sweet corn
1 15-ounce can
Soyboy extra firm tofu
1 15-ounce package

Annie's goddess dressing
1/2 cup
Kale, chopped
1 bunch
Spiced Chickpeas
Wild Harvest chickpeas

- Prepare the millet:
- In a medium saucepan, add 1 cup millet and 2 cups water. Bring to a boil, then reduce to a simmer, cover, and cook for 18-20 minutes or until the liquid is absorbed and millet is fluffy. Fluff with a fork, then cover and let rest for 10 minutes before serving.
- Prepare the tofu:
- Preheat oven to 425 degrees.
- Press tofu for at least 20 minutes to drain the liquid. Once pressed, cut into medium-sized cubes. Spray a baking sheet with non-stick cooking spray. Arrange the tofu in an even layer on the baking sheet and cook, flipping halfway, for 30 minutes.
- Prepare the chickpeas:
- Drain and rinse the chickpeas. Toss in a medium bowl with olive oil, pepper, cumin, salt, and paprika. Spread on a baking sheet and roast for 20 minutes.
- Prepare the corn:
- In a small saute pan, roast the sweet corn, stirring occasionally, until it begins to char.
- To assemble:
- In a large bowl or plate, or in containers for meal prep, add the millet, sweet corn, chickpeas, tofu, chopped kale, and walnuts. Drizzle with the goddess dressing. Enjoy!
