Co+op Basics: Applesauce Muffins

Ingredients
Bulk whole wheat flour
2 cups
Bulk thick rolled oats
2/3 cup + topping
Field Day cinnamon
1 teaspoon
Field Day baking soda
3/4 teaspoon
Field Day baking powder
1 teaspoon
Field Day salt
1/2 teaspoon
Field Day applesauce
1 1/3 cup

- Preheat oven to 425 F.
- Spray a muffin pan with cooking spray or use cupcake liners. If using liners, spray the liners.
- In a large bowl, whisk together flour, oats, cinnamon, baking soda, baking powder, and salt until combined.
- In another bowl, whisk applesauce, eggs, oil, syrup, milk, and vanilla until combined.
- Pour wet ingredients into dry ingredients. Stir a few times, then add raisins. Fold everything together gently until just combined.
- Spoon batter into the liners, filling them to the top. Top with additional rolled oats.
- Bake for 5 minutes at 425, then reduce the heat to 350 and bake an additional 15 minutes until a toothpick comes out clean.
- Allow to cool for 5 minutes.
