Chickpea patties

These chickpea patties are healthy, taste fresh, and are quick to make! Perfect for a family dinner or a rockin' barbecue. Featuring fresh onion, garlic, and parsley and our Co-op basics. These chickpea patties are affordable, filling, and simple to assemble, making them a perfect weeknight meal.

 

To make vegan, replace egg with 2-3 tablespoons of tomato paste or vegan egg replacer.

Ingredients
Chickpeas
1 can
Rolled oats
1/2 cup
Egg
1
Olive oil
2-3 tablespoons
Small red onion
1/2
Fresh parsley
1/4 cup
Garlic
4-6 cloves
Cumin
1 teaspoon
Chili powder
1 teaspoon
Salt and pepper
To taste
All-purpose flour
As needed

Prep time: 15 minutes

Cook time: 10 minutes

  1. Process drained chickpeas, rolled oats, egg, olive oil, cumin, chili powder, salt, and pepper in a food processor or blender. 
  2. Dice onion and parsley and mince garlic. Add all three to the mixture in the food processor and process until well combined.
  3. Pour the mixture into a seperate bowl. 
  4. Use a floured cutting board to shape patties, add more flour to the mixture if needed
  5. Heat oil in a large pan over medium heat. Add patties and cook 4-5 minutes on each side until golden brown.
