Chickpea patties
These chickpea patties are healthy, taste fresh, and are quick to make! Perfect for a family dinner or a rockin' barbecue. Featuring fresh onion, garlic, and parsley and our Co-op basics. These chickpea patties are affordable, filling, and simple to assemble, making them a perfect weeknight meal.
To make vegan, replace egg with 2-3 tablespoons of tomato paste or vegan egg replacer.

Ingredients
Chickpeas
1 can
Rolled oats
1/2 cup
Egg
1
Olive oil
2-3 tablespoons
Small red onion
1/2
Fresh parsley
1/4 cup
Garlic
4-6 cloves
Cumin
1 teaspoon
Chili powder
1 teaspoon
Salt and pepper
To taste
All-purpose flour
As needed

- Process drained chickpeas, rolled oats, egg, olive oil, cumin, chili powder, salt, and pepper in a food processor or blender.
- Dice onion and parsley and mince garlic. Add all three to the mixture in the food processor and process until well combined.
- Pour the mixture into a seperate bowl.
- Use a floured cutting board to shape patties, add more flour to the mixture if needed
- Heat oil in a large pan over medium heat. Add patties and cook 4-5 minutes on each side until golden brown.
