In-Person Cooking Class: Saturday, November 8th from 12-2pm

 

Learn how to make popular Mumbai street food or chaat in our next cooking class with Sirisha Bhandaru. Chaat is an umbrella term referring to a variety of street foods from India that are spicy, tangy, sweet, warm, cold, crunchy and crisp all in the same bite. Chaat is one of the most popular snacks and vary by region. In this class, attendees will explore the foundations of chaat from fillings, chutneys, and toppings and will assemble many their own to enjoy.

 

The menu includes:

  • Bhel Puri: Onions, potatoes, tomatoes, puffed rice, tangy sweet and spicy chutneys, crispy and crunchy elements
  • Paani Puri: Spherical puffed crisp filled with spiced potatoes or spiced white peas and a tangy flavorful water. An explosion of flavor!

  • Dahi Puri: Spherical puffed crisp filled with creamy yogurt, sev, potatoes, and flavorful chutneys
  • Sev Puri: flat crisp cracker topped with potatoes, onions, tomatoes, chutneys and crispy sev

About the Instructor: Sirisha Bhandaru

Sirisha Bhandaru grew up in Andhra Pradesh and Bombay, India where she spent many summers with her grandmother, who taught her how to cook authentic dishes from scratch using home grown ingredients. As she grew older and her family moved to different regions of India for her father’s work, she was exposed to the unique range of regional Indian cuisines. She moved to Champaign, IL nearly two decades ago. Sirisha has been a longtime local food enthusiast and uses Central Illinois ingredients to inspire her recipe development. Since 2016, Sirisha has taught dozens of cooking classes teaching regional Indian cuisines and has adjusted her recipes to highlight local and seasonally-relevant ingredients. Sirisha incorporates Indian culinary arts traditions into her cooking classes with the aim to teach her students how they can incorporate these techniques and artistry in their own cooking. In addition to cultural cuisine instruction, Sirisha also manages her popular Instagram food blog page, My Craves and Raves, known for professional food styling and photography, food storytelling, and recipes.
