Cook a Greek dinner menu with Chef Alisa DeMarco using peak summer ingredients sourced from local farms.

 

The menu includes:

  • Greek Lemon Chicken Skewers - Marinated local chicken breast (or pressed tofu) with bright flavors of fresh oregano and lemon with homemade tzatziki sauce
  • Yemista - Baked tomatoes and peppers stuffed with local Cahokia rice, regional feta cheese, and spices
  • Skordalia - Greek garlic potato dip with fried zucchini chips

 

Registration is $50 and includes meal kit portioned for 2-3 people. Co-op Owners can use promo code: OWNER for $5 off their registration.

 

The meal kit includes preportioned ingredients and recipe cards. Students will be guided through the cooking process of each recipe while cooking along from your kitchen. By the end of the class, you will have a delicious local meal to enjoy!

 

Register using the form below and preorder your class meal kit to pick up on Friday, July 26th from 4-6pm in the Common Ground Flatlander Classroom. Tune in for the live virtual Zoom cooking class on Saturday, July 27th from 3-5pm. Vegetarian modifications are available for this meal kit and would replace chicken with tofu. Participants will receive email reminders about the upcoming meal kit pick-up date with a link to attend the Zoom class.

 

Kitchen Equipment Needed:

  • cutting boards and knives
  • several mixing bowls
  • baking dish for yemista
  • large soup pot
  • skillet or grill for chicken skewers
  • skillet for zucchini

 

About Instructor:

Alisa DeMarco grew up in McHenry County, graduated from the University of Illinois in 1995, and went on to earn her degree in Culinary Arts from the Culinary Institute of America in 2001. After several years working as a chef in various kitchens in Austin, Texas, Alisa returned to Champaign-Urbana and landed a position as Cheesemaker and Executive Chef at Prairie Fruits Farm and Creamery. In this role, Alisa forged deep relationships with the local farmers and food artisans and worked alongside others to grow and promote local, seasonal and sustainable food.

 

Alisa is currently working as Realtor with Coldwell Banker Real Estate Group and is excited to help our vibrant, local farmers flourish and become more accessible to all. She lives with her husband and son in Savoy, Illinois and enjoys gardening, reading cookbooks, music, and gathering with friends and family for good food and conversation.
