Knives are probably the single most used tool in the kitchen, but also the most neglected.  Would you know how to pick out a good kitchen knife?  Have you ever experienced the simple pleasure of working with a truly sharp knife?  Find out in this class.  

In addition to learning what to look for in a good knife and how to take care of it, in this class you will get your hands on a freshly sharpened knife, learn to use it safely, and practice some of the classical methods of slicing, dicing, and mincing (batonnet, julienne, brunoise, chiffonade).

teacher info: Laurence Mate has been playing with edge tools almost as long as he's been cooking.  He operates a local knife-sharpening business out of his woodshop in Champaign and at Prairie Fruits Farm summer market.  He currently sharpens knives for Common Ground, Prairie Fruits Farm, and Dancing Dog.

notes: bring a chef’s knife, if you have one! If you'd like, you can come early and get your own knife sharpened for an additional $5.  (You can also bring additional knives and drop them off for sharpening.)​
