Very Veggie Loaf


1 medium yellow onion, chopped
2 ribs of celery, diced up fine
1 red bell pepper, minced
3 cloves garlic, minced
3 cups of plain bread crumbs
2 tbsp of almond butter
1/4 cup tamari
1 medium bunch of parsley, chopped (if using dried, 3 tbsp)
1 tbsp black pepper
1/4 cup tomato paste
1/8 tsp cayenne
2 tsp dried thyme
2 tsp dried tarragon
2 tsp dried rosemary
2 tsp dried sage
I tbsp garlic powder or granules
3 tbsp  cornstarch or e-nergy egg replacer
2 tbsp brown sugar
I lb extra-firm tofu, mashed
3 tbsp  nutritional yeast
I tbsp  onion powder or granules


Saute the onion until soft, then add the rest of these ingredients and saute
again over medium heat until the pepper and celery are soft as well. Set
aside in a large mixing bowl to cool.

Mix  everything but  the sauteed vegetables together, then add sauteed vegetables and mash/mix 
together very  well. Evenly  distribute to two
well-oiled loaf  pans. Cover both pans  with foil.

Bake at 350° for I 1/2 hours.

Serve  with veggie gravy  and all the fixings. Even dedicated meat­
eaters will love it!!
