Ginger Glazed Carrots


1 lb carrots, washed and thinly sliced
1 Tablespoon butter or margarine
2 Tablespoons maple syrup
1 inch chunk of fresh ginger, peeled and minced
1 1/2 teaspoon salt
1/2 black pepper


Bring a pot of salted water to a boil. Blanch carrot
slices for 2 minutes, drain, and then shock in ice
water. Drain and set aside. Melt butter in a skillet 
and add ginger. Cook for a few minutes, until ginger
is aromatic. Add maple syrup, salt, and pepper. Stir 
to combine. Add carrots, stir to coat carrots in glaze 
mixture, and cook until heated through. Enjoy!
