Sarah's Kitchen Creations: Roasted Pumpkin Seeds

Pumpkin seeds are so nutritious, don't waste them! While you're roasting your pumpkin, you might as well roast the seeds too!

What you'll need to make Roasted Pumpkin Seeds:

1 local pie pumpkin

1 T. olive oil

pinch of salt

(optional) any spice blends

Directions:

1) Using a large chef knife, slice the top and stem off the pie pumpkin. Slice the pumpkin lengthwise down the middle.

2) Scoop the seeds and inner most flesh.

3) Preheat oven to 375F.

4) In a large bowl filled with water, separate the seeds from the flesh. You'll notice the flesh starts to sink to the bottom, and the seeds float. Strain the water once all the flesh is removed.

5) Place seeds on baking sheet. Add pinch of salt, your spice blend, and a tablespoon of oil. Stir seeds in oil, salt, & spices, then bake in the oven for ~30 minutes or until the seeds are golden and toasted. Taste test the seeds until you're happy with the flavor. When in doubt, bake for longer.

And that's it! Roasted pumpkin seeds are so simple and make an ideal autumn snack! Try a variety of spice blends for different flavor profiles!
