Ingredients

  • 1 tablespoon minced fresh ginger
  • 1 tablespoon garam masala
  • 2 teaspoons mustard seeds
  • 1 teaspoon cumin
  • 3 cups diced yellow onion
  • 2 tablespoons minced garlic
  • 2 pounds boneless pork loin, trimmed of fat and cut into 1/2- to 1-inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil (divided)
  • 1/2 cup red wine
