Cantonese Tea Smoking: Turkey Breast, Chicken, and Tofu

Tea smoking is a traditional Cantonese way to rapidly impart a complex, smoky flavor to foods. It can produce gorgeous, mahoghany-skinned chicken and turkey breast, as well as tofu with a luscious, dark exterior. It's a great technique to learn for the holidays or other times of year when you want smoky flavor but are tight on time and/or facing uncooperative weather conditions.
About the Instructor: CGFC Education Coordinator, Anna Barnes, has taught canning, cheesemaking, yogurt, and tofu making at the coop for nine years. She also authored Local 365, a bi-weekly column on locally grown and foraged foods for Smile Politely.
