Fresh in the deli: Four Powerhouse Salads

If color is the key to good nutrition, then we've got a rainbow of options for you. These salads are what we like to call "Powerhouse Salads" because they are literally packed full of nutrients. The best part is that they are ready and waiting everyday and can be found in our deli's grab & go case! 

 

 

Kickin' Kale Salad: Kale contains omega-3 fatty acids which is one type of fat you do not want to cut back on! Kale is also high in protein, fiber, vitamins A, C and K, as well as foliate. Minerals like phosphorus, potassium, calcium and zinc are also found in kale. Carrots, red pepper, green onion, sesame seeds, almonds, powdered ginger, tamari, veganaise, tahini, toasted sesame oil, and apple cider vinegar help to make the kickin' kale salad delicious and nutritious!

Granny's Got the Beet Salad: With organic granny smith apples and organic beets as the stars of the show, it's easy to see how this salad got it's name! This salad packs a punch when it comes to nutrients. Beets provide many health benefits including minerals like potassium, magnesium, fiber, phosphorus, iron; vitamins A, B & C and nutrients such as beta-carotene, beta-cyanine and folic acid. Beets are also a known aphrodisiac and were used by Ancient Romans for medicinal purposes. Beets are used for their high antioxidant levels, especially when consumed raw and are also known for having anti-inflammatory, cleansing, and mental health benefits. 

Mediterranean Lentil Salad: If heart healthy and cholesterol lowering is what you're into, check this salad out! Green lentils are high in soluble fiber which helps lower your risk for heart disease and stroke by keeping your arteries clean. The magnesium and folate in lentils not only help to lower your risk for heart disease, but also improve blood flow in the body as well. Lentils are also great for improving digestion, increasing energy, assisting in weight loss and they are high in protein which makes this legume an excellent choice for vegetarians and vegans. The Mediterranean salad also contains carrots, red onion, garlic, celery, walnuts, parsley, lemon juice, olive oil, bay leaf, thyme, salt and pepper. It's vegan, all organic, delicious, and good for you! 

Rustic Quinoa and Yam: Containing all of the essential amino acids, quinoa is in itself a "superfood". The ancient grain is a protein powerhouse as well as rich in fiber, iron, magnesium, lysine, riboflavin and manganese. Along with quinoa, yams are a reat source of energy making this salad great to eat right before a run or as a side at lunchtime.
